EASY SUPPERS FOR ON-THE-GO FAMILIES: SLOW COOKER MEAL SERIES #3
Slowcooker meals can be made at home, in your hotel at the ski hill; made ahead and brought to activities in a thermos. They can be brought to friends when they need some help or they can be made and individually frozen for a quick, easy meal at work. No matter how you use them, they are GAME-CHANGING!
These Meatball Subs are a family favourite and are the third in a mini series of blog posts that will feature slowcooker meals that can be made ahead and then frozen to save you on a busy day when you have absolutely no groceries in the fridge! Make two or three and gift them if you like! We have chosen very specific meals that are tested and loved by our own families. Hope you LOVE them!
Meatball Sausage Subs
ASSEMBLY INSTRUCTIONS:
Meatballs: (makes 25ish)
½ cup breadcrumbs
¼ cup milk
1 lb ground beef
1 tbsp parsley
1tsp garlic
1 egg
Mix all ingredients and form into 1” meatballs. Freeze on parchment on a cookie sheet until firm.
In large bag add:
1/2 lb italian sausage, sliced (meatball sized)
3 cups crushed tomatoes
4 tbsp tomato paste
bay leaf
1 tbsp parsley
1 tsp garlic
Salt and pepper to taste
In snack bag add: ¼ cup parmesan cheese
In sandwich bag add: 1 cup mozza
In medium bag add frozen meatballs.
In large bag add: 6 italian sub buns
COOKING INSTRUCTIONS:
1. If frozen,thaw overnight in fridge.
2. Place sausage bag and meatballs in slowcooker. Cook on low for 6-7 hours or high for 3-4.
3. Stir in parmesan and serve on buns with melted mozza. Place under broiler to lightly toast mozza if desired.
