Meal Plan Week Fifteen

This week is more about comfort food than healthy food, each supper equally delicious to the next. I have not used an Instant Pot before (Lori is the master of the Instant Pot, while I resisted… until now) so I will be trying the mashed potatoes this week in the IP. Wish me luck! And as always, let me know if you’ve got any questions! Have a fabulous week! ~ Leah

MONDAY - Chorizo Breakfast Bowls. If you prep the turkey chorizo ahead of time, feel free to make double and freeze half of it for another day. Variations: I use sweet potato instead of white potatoes, and adding black beans or frying peppers/onions/mushrooms with the chorizo is a really great addition.

TUESDAY - Spaghetti with Meat Sauce and served with garlic bread. Another great recipe that freezes really well. Be careful if you freeze the sauce in a mason jar - if you don’t leave enough room, or don’t cool the sauce thoroughly the glass with crack. And it’s really sad when it cracks and you can’t use it!

WEDNESDAY - Turkey Pesto Meatball Subs from Supper Studio. Remember the Sausage Meatball Subs from a few months ago? These are even better. Order ahead of time to ensure that you get these because they are phenomenal!!

THURSDAY - Sloppy Joes. An classic supper that is still a winner every time. Serve over buns and with raw veggies and dip.

FRIDAY - fridge. Use those leftovers up so they don’t go to waste! There’s just something special about a buffet of leftovers to choose from when you don’t feel like cooking!

SATURDAY - Italian Turkey Soup from Supper Studio. This is packed with protein and fiber - ground turkey, carrots, celery, onion, navy beans, and so much flavour! Click here to head to our website.

SUNDAY - Swedish Meatballs from the Pinch of Yum website. These are a bit of work, and if you’ve got time you should make them because they’re delicious. HOWEVER - if you don’t have time or truly just don’t want to: BUY frozen swedish meatballs from the grocery store. This is not cheating, this is called feeding your family. You do what works best for your family. If this is what you choose - don’t buy the things on the grocery list with a star behind them - instead, pick up a bag of those meatballs from the freezer section at the store.
