The Lost Week Meal Ideas
Happy Holidays! I call the week between Christmas and New Years “The Lost Week” Like everyone, we wander aimlessly eating anything we can find with no idea what day it is or if we need to be anywhere. It seems especially hard this year when the evenings out and fun plans with friends are on hold.
I woke up yesterday morning and decided we needed some real food. I’ve gotten by with feeding my family charcuterie, fondue and candy for at least a week. So I over achieved and made two real meals.
Breakfast was Eggs Benedict and Roasted Dill and Parmesan Baby Potatoes. It was a big hit. I should’ve made a double batch of hollandaise, I think that having extra in the fridge can never be a bad thing. I did the potatoes in the air fryer at 400 for 15 minutes. So far we are loving this appliance and my only complaint is that I would like to make larger portions in it.
Lunch was a pantry meal that was super quick and easy. I rounded up a package of gnocchi, cremini mushrooms, sundried tomatoes and chicken. I did pan fry the chicken and roast the rest, next time I’ll do it all on the sheet pan.
This is what I pulled out and threw on the pan:
2lbs chicken breast, butterflied
1 pkg gnocchi
½ cup sundried tomatoes in oil
½ cup small diced onion
2 cups large diced cremini mushrooms
1 tbsp garlic
2 tbsp olive oil
salt and pepper
Preheat oven to 425 degrees. Add all ingredients to large bowl and mix well. Spread evenly on sheetpan and bake for 15 minutes. Stir halfway through.
If desired add a couple handfuls of spinach and allow to cook a few minutes before taking the pan out of the oven. I also added a healthy handful of parmesan cheese.
It was a hit and I will be making it again!
