Meal Plan Week 10


We are slowly coming out of this deep freeze and dreaming of Mexico and Margaritas! Knowing our love of all mexican inspired dishes, this week has a theme!


MONDAY -  Vegetarian Enchilada Bake  This is a great Meatless Monday meal - to get ahead of the prep, premake the quinoa on Sunday.

TUESDAY - Spicy Chicken Lime Soup (double this recipe for 4 servings)

WEDNESDAY - Shredded Beef Fajitas from Supper Studio - here’s this months menu

THURSDAY - Quesadillas with Guacamole and Spicy rice. (These can be vegetarian or use some leftover beef from yesterday's meals if there is any)

FRIDAY - Fridge

SUNDAY - Shrimp Tacos

GROCERY LIST

2 chicken breasts

1 lb shrimp

2 onions

2 carrots

2 stalk celery

1 jalapeno

1 red pepper

4 limes

1 bunch green onion

2 avocados

1 bunch of cilantro

7 garlic cloves

2 tbsp fresh ginger

3 cups coleslaw mix

guacamole

1 750g pkg of cheddar

½ cup sour cream

½ cup cotija cheese

2 cans black beans

1 can green chilis

1 cup tomato sauce

1 tbsp adobo sauce

10 cups chicken broth

2 ½ cups frozen corn

1 ¼ cups quinoa

1 10 pkg of large tortillas

1 8 pkg of small tortillas (you can use corn if desired)
