This layered, one-pot meal consists of flavourful chicken smothered in enchilada sauce and topped with corn tortillas, pinto beans, and shredded mexican cheese. Thirty minutes on the stovetop and only one dirty pot, you can’t go wrong with this delicious number. We suggest serving this with a side salad or rice and refried beans.
